As we're settling into winter and spending long days or nights in the rink, bone broth is a great option. It's relatively easy to make and packed with minerals like magnesium, calcium, potassium, and more. Broth also contains glycine and proline, aiding gut health and digestion, which we'll discuss in a future post. Another secondary benefit we like is that it can take the place of late-day coffee, which will avoid sleep disruptions and improve your recovery.
Add carcass to the bottom of a large pot and chop onion, carrots, and celery. Add veggies and garlic, ginger, and spices to the instant pot, cover the carcass with water and add the apple cider vinegar. Bring to a boil, reduce and simmer for 12+ hours.
